Missions :
Définit, met en œuvre et supervise la production culinaire (élaboration, préparation des menus, préparation et dressage des plats, commandes de produits,..) de 3 restaurants d’hôtellerie internationale (dont un restaurant gastronomique),d’1 service banquet /séminaire le tout selon les normes d’hygiène et de sécurité alimentaires, des standards de l’établissement et les impératifs budgétaires.
Contrôles et coordonne les activités d’une brigade de 34 personnes ainsi que le coût nourriture.
Assure une cuisine raffinée allant jusqu’à 600 couverts par jour.
Profil :
Expérience de 5 ans dans un poste similaire, personne de terrain, formateur, faculté d'adaptation, sens des responsabilités, créatif, maitrise de l’outil informatique, grandes aptitudes relationnelles, parlant anglais.
