Assistant General Manager – Sant Ambroeus Paris Location: Paris, France Department: Restaurant Operations Reports to: General Manager / Director of Operations About the Role Sant Ambroeus Paris is looking for an experienced Assistant General Manager to support the day-to-day operation of our restaurant. The Assistant General Manager is responsible for leading the restaurant in the absence of the General Manager, ensuring exceptional guest experiences, maintaining operational excellence, developing the team, and driving financial performance. This is a hands-on leadership role requiring a strong presence on the restaurant floor and the ability to lead by example in a fast-paced, luxury hospitality environment. Key Responsibilities Operations * Support the General Manager in the daily operation of the restaurant. * Lead the restaurant during the General Manager’s absence. * Monitor service standards and implement operational improvements. * Ensure efficient department organisation and communication. * Support the development of new menus, promotions and guest experiences. * Maintain and update all service standards, SOPs and training materials. Guest Experience * Be present on the floor throughout service. * Lead by example in delivering exceptional hospitality. * Build relationships with regular guests and VIPs. * Resolve guest concerns promptly and professionally. * Coordinate private dining events and special occasions. * Ensure every table receives personalised attention. Team Leadership * Supervise and support managers and hourly team members. * Recruit, train and develop new employees. * Conduct regular coaching and performance reviews. * Promote accountability, teamwork and professional development. * Foster a positive culture focused on excellence and hospitality. Financial & Commercial Performance * Support labour scheduling and productivity. * Monitor food and beverage costs. * Drive revenue through upselling and promotional initiatives. * Review sales performance and identify opportunities for growth. * Ensure accurate recording of hours worked and operational reporting. Product & Quality * Maintain the highest food and beverage standards. * Monitor presentation, cleanliness and service execution. * Oversee inventory of beverage, china, glassware and service equipment. * Ensure grooming and appearance standards are consistently maintained. Administration * Maintain accurate menus, wine lists and POS information. * Keep training manuals, job descriptions and operational documents up to date. * Respond professionally to company communications and guest correspondence. * Review Avero and other operational reports to identify performance opportunities. * Attend management meetings and contribute to business planning. Health & Safety * Ensure compliance with company policies and local regulations. * Promote a safe working environment for guests and employees. * Uphold food safety and sanitation standards at all times. What We’re Looking For * Previous management experience in a high-volume, premium or luxury restaurant. * Strong leadership and people management skills. * Passion for hospitality and guest service. * Excellent communication and organisational abilities. * Commercial awareness with an understanding of labour and cost control. * Ability to remain calm under pressure and make decisions quickly. * Fluent English required; French is an advantage. * Flexibility to work evenings, weekends and holidays as required.
